Brian

Flavorful cut that shines when cooked low and slow, boneless.

Beef, Brisket 2.0-2.3 lbs

Cut from the front shoulder, this is a perfect roast for cooking low and slow; prepare it whole for a tasty pot roast or cut up for stews.

Beef, Chuck Roast 3.1 lbs

Tenderized cut that is tasty and perfect for country-fried steak (and lots of other things). Multiple pieces per package.

Beef, Cubed Steak 0.9-1.2 lbs

Lean and fairly tough cut of meat that is perfect for marinating. Can be quickly cooked over high heat or slow-cooked to fall-apart tenderness. Cook it whole and then slice it across the grain for the best eating experience. Each package contains one large flank steak.

Beef, Flank Steak 1.0-1.3 lbs

Versatile staple! Our ground beef is lean and mild flavored.

Beef, Ground

Beef, Liver 1.1 lbs

Each package contains one large steak, cut 1-inch thick. This same cut is also sometimes called top round steak. It is lean and on the tougher side, meaning it takes well to marinades or slow cooking methods.

Beef, London Broil 2.0-2.4 lbs

Bone-in steak with a filet on one side and New York strip on the other. All porterhouse steaks are T-bones, but not all T-bones make the cut to be called a porterhouse (the filet portion is larger on porterhouse compared to T-bone steaks). These beauties are two per package, cut 1 inch thick.

Beef, Porterhouse Steak 1.6-1.8 lbs

Bone-in rib-eye. Brian's favorite. These tasty treats are two per package, cut 1 inch thick.

Beef, Rib Steak 1.2-1.4 lbs

Large, lean bone-in steak with a perfect balance of tenderness and flavor. One per package, cut 1 inch thick.

Beef, Sirloin Steak 1.5-1.8 lbs

What's included:

Beef, Brisket 2.0-2.3 lbs
Beef, Chuck Roast 3.1 lbs
Beef, Cubed Steak 0.9-1.2 lbs
Beef, Flank Steak 1.0-1.3 lbs
Beef, Ground

Our gouda cheese is sweet and nutty. It's name comes from a prominent hill we can see from our farm. This cheese pairs well with full bodied red wines

Lusk (1 lb)

Our cheddar has a creamy, sharp flavor that intensifies as it ages. Its name is hyphen of the two gentlemen that owned the dairy-Martin & McClure. Pairs well with dry white wines

Stumbled across this place searching for a cheese shop (online) one morning. This family owned and operated dairy farm is amazing! We purchased cheeses, yogurt, butter and eggs. Everything was delicious! I really wanted to try the pimento cheese but they were out. We will definitely be back!

I can't say enough about the products that are produced here. The beef is the best I have ever eaten. I can tell you that if you use their ground beef and make a 1/2 pound burger it will still be 1/2 pound when it is put on the bun. I highly recommended them.

Please join us in addressing food insecurity during this holiday season. Use the Quantity option to donate beef to the Fauquier Community Food Bank.

We donated one of the first four cows we had USDA processed to this local charity in August 2020. Through subsequent donations, we have given almost 500 pounds of beef to the hungry. Now, through this option, we can work together to do more.

Here is how it works:

· You select the dollar level of your donation in $20 increments (Qty1 = $20, Qty 2=$40,...Qty5=$100)

· We work with the food bank to coordinate the quantity and type of meat for delivery

· We gather your donation and others, and supply the meat at our cost

· You receive a photo of your donation, and a receipt for your donation from Fauquier Community Food Bank, a registered 501(c)(3) Organization

Cooking with Truffles: A Chef's Guide. By Susi Gott Seguret

"This book is for the chef who has been plunged unexpectedly into cooking with truffles, and for the home cook who seeks some overarching guidelines to experimenting with this precious tuber. It is also for anyone looking for a collection of simple, doable, everyday recipes which can be confected just as well with or without truffle. Most importantly, it is a tribute to the truffle farmers who have worked and watched and waited in blind faith for their first and following crops to come to fruition, who are brave enough to embrace a seeminly impossible passion, who have generously shared their experiences with me along the way. And for the truffle itself, that dark, deep, mysterious nugget that signifies the deliciousness hidden in each of us"-Susi Gott Seguret
