Our whole stewing hens are mature laying hens that have been raised naturally and aged beyond their prime egg-laying years. Unlike young broiler chickens, stewing hens develop firmer meat and a rich, full-bodied flavor that makes them highly prized in traditional cooking.
 
Stewing hens shine in slow-cooked dishes where their depth of flavor can be fully appreciated. Their meat is not as tender as younger birds, but the long cooking process transforms them into incredibly flavorful additions to stocks, soups, and braises.
