A long, narrow, and lean muscle located within the loin, the beef filet/tenderloin is the most tender cut of beef available. The tenderloin is a long muscle stretching from the loin primal to the sirloin primal. It is near the cow’s backbone, so it hardly gets any exercise. Hence, the muscle fibers are small and extremely tender, yielding a fine-grained, lean piece of meat with very little connective tissue or fat.

DEPOSIT ONLY Today: $2,086 (plus remaining balance due later) - Quarter Certified Grassfed & Grass-finished Longhorn Beef

When your beef goes to the butcher this summer, we will invoice you the amount of your second payment, $2,086 plus any additional variable amount which will be dependent on the weight of the whole carcass. Your beef will be ready about four weeks after the butcher date.

Our Texas Longhorn cattle live their lives on pasture and are supplemented during dormant seasons with grass hay that we cut and bale ourselves. Our cattle roam unconfined in our pastures, grazing the native Colorado grasses, and are never fed or treated with antibiotics or steroids. Our cattle are AGA Certified lifetime 100% Grassfed and grass-finished, USDA or State-exempt harvested and hand butchered. Meat is vacuum sealed plastic wrapped unless paper wrapped is requested prior to cut and wrap.

A deposit is essential for us to get to work raising your beef. It helps cover the upfront expenses such as land ownership or lease, insurance, equipment and maintenance, minerals, fencing, veterinary care, transportation, marketing costs, labor and time that are necessary to raise and process the beef in the right way. Because of this tremendous investment, the *deposit is non-refundable*

Offal Notice: Please let us know if you would like any of the offal.

FREE Pickup at our Farm in Calhan or our freezer storage in Colorado Springs (Nevada Ave. & Fillmore area)

We also offer delivery to your door for a small fee. $0.70/mile from either our farm or our freezer storage (whichever is closest to you). Minimum delivery fee = $15. ***Disclaimer: We apologize, but because we don’t know how you store your beef once you get it home, we are not able to accept returns. We also don’t know all the details on how you cook the beef, and therefore cannot offer a refund. We do understand that purchasing bulk beef is a significant investment, and we will provide you with our tips and tricks to cooking grassfed beef. If you are unfamiliar with cooking and consuming grassfed beef, we suggest you start by purchasing small quantities to test before you make a large investment. If you are unhappy with your beef, please contact us and voice your concern. We are happy to troubleshoot or connect to you someone on our waitlist for beef.
