Our whole stewing hens are mature laying hens that have been raised naturally and aged beyond their prime egg-laying years. Unlike young broiler chickens, stewing hens develop firmer meat and a rich, full-bodied flavor that makes them highly prized in traditional cooking. Stewing hens shine in slow-cooked dishes where their depth of flavor can be fully appreciated. Their meat is not as tender as younger birds, but the long cooking process transforms them into incredibly flavorful additions to stocks, soups, and braises. They are especially valued for making golden, nutrient-rich bone broth and hearty chicken soup. For generations, stewing hens have been the secret behind the best chicken soups and broths. Please note that even as these girls age and lose productivity we keep them as part of the group they were raised with until the entire group is retired. When energy is redirected away from egg laying the hens tend to put on more fat since we never restrict feed. Some hens will have more yellow, flavorful fat, which enriches broth and soups. The deep yellow fat on our stewing hens is richer and more savory than the white fat you see on broilers. All poultry have been air chilled, a preferred method because it better preserves the bird's flavor, let's the meat absorb marinades better and doesn't add water weight. Air chilled meat is more environmentally friendly than water chilling because it produces less contaminated water. Our animals are raised on certified organic feed, enriched with home-grown herbs and produce to ensure the highest nutritional value and flavor. We believe in happy healthy animals who are never exposed to chemicals like herbacides, pesticides and commercial fertilizers. Better feed equals healthier animals and produces a Chem Free product.
