This product offering for the black label comes out of our Fullblood Wagyu program only and will be your culinary ticket for the Wagyu Experience. All of the animals that reach the 'black label' status here at Twin Oaks must first meet certain thresholds for the various marbling characteristics and grading before they can achieve this special label. We determine this based on the animals carcass scan that is done, by our butcher prior to cutting, with our MIJ Carcass Camera which grades the animals ribeye on the Japanese grading scale. Based on all of the information we have found, our 'Black Label Wagyu' should be grading alongside the Japanese A4 products. The BLACK LABEL CHUCK EYE steak, nicknamed the 'Poor Man's Ribeye' because it's less expensive but has a similar flavor, is a cut of beef that comes from the shoulder. The fat ratio of this unique steak sets it apart as a beefy, tender and flavorful cut! --- Our CHUCK EYE steak is typically cut around 1" thick and will roughly be 8oz. in weight! All of our beef is individually wrapped, vacuum sealed, labeled and weighted with our farm's logo on it.
