Plum River Farm
Our Hereford cattle eat only our own grass and hay, grown without pesticides or herbicides on our 242 acre farm, which is located in the driftless region of northwest Illinois. Our animals are never given hormone treatments, and are never fed antibiotics (never needed them!)* The animals have ready access to fresh water from the springfed streams and rivers that run through our pastures. The animals have free access to pasture every day of the year, with rare weather-related exceptions. We work hard year round to provide our animals with optimal conditions to grow consistently, from beginning to end. In order to ensure their health and well-being, we adhere to the strict standards developed by the American Grassfed Association. Our beef has an excellent nutritional profile, as testing by Dr. Susan Duckett at Clemson University demonstrates. Dr. Duckett's research contributes to the growing body of evidence that grassfed beef is a good source of heart-healthy Omega-3 and CLAs, and is far lower in potentially harmful Omega-6 than grainfed beef. *In the rare instance an animal contracts a bacterial infection best treated with antibiotics, we would not let the animal suffer, but would provide them with the most appropriate medication in the lowest possible dose, then triple the normal wait time before the animal is processed to ensure that there are no traces left in its system.

For whole, halves, and quarters: is the beef sold by weight of meat in your freezer, or by hanging weight, dressed weight, carcass weight or live weight? Each of these will be significantly different; live weight might be 3X the weight of the meat that goes in your freezer. We sell by weight of meat in your freezer, so that you can more clearly picture what a quarter or side includes. Is the meat dry-aged? Ours is dry-aged for 3 weeks, which reduces fluids, develops flavor and texture, making for a denser, superior product. It also decreases the weight further, making price comparisons by weight with non-dry-aged beef more difficult. In contrast, much supermarket beef is injected with fluids which boosts its weight. How much fat are you buying with your beef? Our beef is very low in fat, so that more of what you receive will be usable meat. Rest assured, though, that if is cooked correctly, our beef is tender and delicious. Are processing charges included? If buying a whole, half or quarter, does the per pound price include soup bones and organ meats? We sell soup bones and organ meats separately at less than the per pound price for the rest of the animal, since many people prefer not to have them. We do recommend purchasing them, though; they are excellent!
