November 29, 2024Discovering the Chesapeake Fold Farms has been a delightful coincidence for us. We came across their products in the Newark farmer's market, where we were offered amazing samples of cheese and milk. The quality was so amazing that we were instantly hooked and never went back to store-bought milk. Sure, the price is not as low as industrially-produced milk, but a few more bucks are, in my opinion, a very small price for such high quality milk. The milk has a wonderful rich taste, and it goes perfectly with coffee (perfect for lattes!). They have a wide selection of cheeses and they constantly add in new flavors, I highly recommend the onion cheddar, and their ciderhouse is just great. We have also tried their different cuts of meat, which were incredibly delicious and high quality, in stew or stir-fry, as well as cooked as steak. In addition to all of their amazing products, they are a wonderful family who are always helpful. Bob in particular has been so wonderful in helping us, especially during the colder season when the outdoor Farmer's markets aren't happening. It is very convenient to send him a text message and ask if I can pick up milk/yogurt/meat and he will let me know when to go. They have a cute little shop on the farm which apparently used to belong to their farm doctor a century (?) ago, really something to see with the abtique style hardwood floor to the medicine cabinet, which they've kept intact. Bob has also given me ideas for recipes with different cuts of meat that confused me. They always have different specials too, from a dairy-lover special to a person who is into charcuterie boards for hosting events. Cannot recommend more, and if you're looking for high quality food, this is definitely a place to go. Supporting their business will also ensure that others (including your children!) can enjoy their high quality and nutritious products for years to come.

Cheese, Aged Cheddar
$8.50
Unit size is per 8 oz It takes a lot of patience to be a cheesemaker but the outcome is so worth the wait! Our aged cheddar is made the same way as our regular cheddar cheese except it is aged a minimum of 18 months. This longer aging process gives the cheese the opportunity to break down more fats and proteins for a smoother texture and more developed flavor. Holding true to a cheddar you will still get the milky, sweet, buttery notes but they intensify on the palate with a browned butter finish. We love to pair this cheese on a board with apple slices from Milburn's Orchards.

They are best served sliced thin and at room temperature to get the most flavor. These salamis are approximately 6oz. (They will never be under but may be over)

At their recommendation we made burgers with their ground beef and topped it with the Italian Colby cheese tonight and it was amazing. We also love their yogurt and beef sticks. Very happy we got to meet them at Broken Spoke’s Mother’s Day event.
