Our version of Tomme, which is very similar to an alpine style cheese. It is mild, semi-firm, and has a sweet butter flavor. This cheese has been aged for 60+ days or more and is made with raw cow’s milk. Pairs well with malty Beers: Bock, Munich Dunkel, Oktoberfest beers and Grenache, Pinot Noir, Syrah wines.

I heard about BoBell cheese a couple of months ago - we got some for the holidays and they are amazing! I wanted to use the rind, and I added some to my spaghetti sauce - it added an extra depth of flavor and a saltiness from the cheese. My husband said it’s the best sauce he’s ever had! The rind doesn’t melt...just remove it before serving. Thanks for the awesome local cheese!!
